Achieving Clarity













Step IV: Clarity

This step is all about clarification and polish. We simply racked (transferred) the wine from one place to another. We also added more metabisulphite to prevent oxidation, and allow for aging over 6 months. That's it! Now we wait (again), and then bottle it!

Of course, I wouldn't allow this step to occur without sneaking a taste! The wine tastes full-bodied and young, with distinct oak characters. Wow! I am severely amazed each time I stop to consider what it is we are doing here!
